CRISTALINO

The crystalline aged tequilas are the product of an artisanal process through which tequila that has been in barrels for a year or more is filtered in different ways, achieving a smooth and crystalline flavor and color. Tequila El Amo Premium Cristalino is obtained through the process described above, starting with a premium white tequila, aged for 18 months in American oak barrels, achieving Premium characteristics.

Tequila Process Step 6. Aging

While Tequila then goes into oak barrels where it is stored for 2 months for Reposado Tequila, one year or Añejo Tequila and 3 years for Extra Añejo Tequila.

Tequila Process Step 5. Distillation

The fermented juice is distilled two times in copper stills. The first distillation is always a rough, low-grade distillate and the second is used to purify and create a product that captures the aroma of the agave and, at the same time, taste as pure as possible.

Tequila Process Step 4. Fermentation

This process lasts for 72 hours. In this process, the most are poured in stainless still tanks and yeast is added to convert the sugar into ethyl alcohol.

Tequila Process Step 3. Crushing

Step 1. Jima. Step 2. Cooking. After cooking, the “piñas” are placed in crushing mills to obtain the juice or most.

Papaya Margarita

 1/2 Papaya, peeled and chopped. 1 cup El Amo Tequila Reposado. 1 Tablespoon of Lime Juice. Crushed ice. Salt/Chili for the rim of the glass. Rim the glass with salt and chili combined. Add papaya, lime juice and El Amo Tequila Reposadoto a blender. Blend until smooth. Serve over crushed ice. Enjoy! ¡Salud!

Tequila Process Step 2. Cooking

When the plants reach their peak ripeness, the leaves are stripped off and only the cores or “piñas” are cut in halves and loaded in the oven to obtain proper cooking. This process lasts around 48 hours, during this time, steam and pressure are injected to convert starches into sugars.
