Agaves are harvested by jimadores using a special razor sharp shovel called “coa”. The “coas” allow the jimadores to both uproot the agave and take the tips of the agave plant to create “piñas”(swollen, juicy stem that is the part used for making tequila).
Given that, What is a jimador? A Jimador is a type of Mexican farmer who harvests agave plants. This task requires the skill of identifying the good agave.
It’s not easy to be a Jimador and it’s needed a lot of experience.
